Well established, branded and privately owned/operated senior living lifestyle company is seeking a Corporate Chef with culinary credentials and substantive creative skills. Chef works closely with owners and management, onsite management staff and onsite kitchen staff to elevate the dining and hospitality experience in our communities. Position is across two senior living brands that focus on holistic wellness, healthy living and hospitality. Culinary focus is healthy, organic, fresh:made products and in kitchen production. Experience with dietary tailoring, such as Paleo or Vegan cooking is a plus. This is a unique opportunity for right skilled candidate and is a very hands:on role, not clipboard and verbal direction, but intense in kitchen production, taste profiling of menu items, writing of menus, procedures, line sets, and oversight, encouragement and training of kitchen operations with kitchen management teams.
Responsibilities and Duties
:Menu creation across multiple product lines and unrelated menus
:Ability to articulate procedures, recipes, menu wiring, descriptions
:Skillful in teaching recipes and procedures to multiple staff members
:Unique creative skills in producing one of kind items, iconic center of plate and side offerings
:Very hands:on, not desk or office oriented, most of time spent in kitchen production, menu item development, roll out, staff training, oversight of menus, constant follow up and guarantee of concept taste profile guest plate level.
Qualifications and Skills
:Strong butchery skills in all meats, primarily beef and seafood proteins
:Ability to source organic produce, wild caught seafoods and grass / pasture raised game, beef and poultry.
:Strong experience with fine dining preferred
:Creative and unique ability to form leading and edgy recipes
:Good at guest interaction, table side
:Strong in plate art and presentation, visual dynamics, wow effect
:5+ years of kitchen management
:Certified culinarian with diploma and credentials
:Must be self:directed, centered, take criticism, and able to manage schedules
